So I made something this past weekend that is an acquired taste. Not everyone will find it appetizing. But the people who do will find it pretty darn wonderful!
For some reason, Beef Tongue is not something that Americans who are born and raised in the U.S. will eat willingly. In other countries all over the world, it’s often considered a delicacy. The meat is super soft and easily infused with flavors when cooked properly.
I think what scares people off is that the actual meat looks like a tongue! If you eat it, it’s like you’re going to French kiss a cow! Come on, isn’t it your life long dream to make-out with a cow?
I was lucky enough to get the meat portion already prepped and butchered for me. In other words, the exterior “coat” of the tongue was already removed for me, so I didn’t have to do that part. But okay, enough with the squeamish talk. Let’s get cooking!
(And I know, I know. I’ve also been pressure cooking a lot of interesting things lately such as oxtail, pork belly and now beef tongue. What can I say? I’m an adventurous eater. The only thing I won’t eat are land insects. HAHA)
INGREDIENTS:
- 2 Cup Red Wine
- 2 Cups Crushed Tomatoes
- 2 Cups Chopped Carrots
- 2 Cups Chopped Mushrooms
- 1 Cup Chopped Onions
- 1/2 Cup Chopped Olives
- 2 Tbsp Minced Garlic
- 1 Tbsp Paprika
- 1 Tbsp Chili Pepper
- and a 2-3 lb Beef Tongue (Enlarge image at your own risk! hehe)
I’ve made the image of the beef tongue as small as possible. But just imagine it as a nice chunk of beef roast or something. And ignore the tongue piercing scar, I don’t know how that got there. hehehe
In the main cooking pot of your pressure cooker, place the beef tongue in first. Then the rest of the ingredients, just pour it right in. The sauce that these ingredients make will be a super flavorful pasta sauce or gravy once the fat is drained from it.

Close the lid to your pressure cooker and lock it into position. Adjust the Pressure Valve to AIRTIGHT.
Beef tongue need to be braised and cooked for quite a long time, especially on the stove top. Since I’m cooking mine as a whole piece without cutting it into portions, I programmed my pressure cooker to pressure cook for 60-minutes. Press START.
While the pressure cooker is doing its thing, you can prepare some noodles or some rice or even mashed potatoes to serve with the goodness.
Flash forward. The pressure cooker is done cooking. I would actually recommend allowing it to drop in pressure on its own naturally.
Adjust the pressure valve to make sure all the pressure is already gone before unlocking the lid.
Give everything a good stir and season with salt and pepper.
Remove the meat with tongs and place it onto a platter. You can slice it up into 1-inch slices like I did, or cut it up into small chunks. Once finished, put it back into the sauce in the pot.
You can serve it immediately or if you allow it to cool down and refrigerate it over night, the fat in the sauce will become solid and can easily be removed.
The meat is super tender, soft and juicy. If you like beef tongue, you will enjoy this immensely!
Thanks! I love tongue and have yet to make it in my instapot. I don’t really understand understand why so many shy from tongue, it’s delicious! If they were served tacos del lengua or a dish like this and told it’s beef they’d just think it’s delicious.
Excellent! I too am amazed at the turned up noses of this delectable cut of meat. I eat about 40 pounds of tongue per year.
Cooking in a PC cuts the cooking time, braising, simmering, etc. by 75%, from 4 hours [for a 4lb tongue] to 1 hour for the same piece of beef. Sounds good to me 🙂
This recipe would be good with egg noodles too, or over mashed potatoes & collard greens, as the sides.

It is 1 Tbsp cayenne or 1 Tbsp chili powder? The recipe says cayenne but the picture says chili powder. 1 Tbsp cayenne seems like a lot…

I was raised on Beef Tongue. And I love it. I purchsed 2 3lbs. 3 oz and 3 lbs 37 oz for the first time. I’m going to cook one in my Electric Power Pressure for the first time. A girlfriend did one in PC and it was really good. So I will send a comment after I try mine.
this recipe sounds good. I’ve eaten tongue all my life, my parents cooked it but I have never cooked it. I just bought 2 Beef tongues for the first time. kinda of nervous on cooking one. I am going to cook it in an electric power pressure cooker which I’m learning on how to use. All I can do is pray.
Was raised on tongue. My mom cooked it with shredded carrots, celery and make gravy, serve it with mash ptatoes. It is one of my favorite dishes taht we had for a sunday dinner. One sunday mom made it for the company and they ate it for the first time without telling them what it was and they said that this is good and so tender. later that day when the company was about to leave she told them and they go “I am starting to feel sick”. It was all in their heads about getting sick

I love to eat beef tongue, and cooked it just once. I remember having to remove the skin after boiling it in the water. How do I do that with this recipe? I am waiting for my pressure cooker order to come in and I’m already planning!!

I am so glad I found this recipe. I am an American, living in Costa Rica and I had cow tongue for the first time a couple of months ago. We were invited to a Tico birthday party, the person giving the party owns a meat store and he had prepared the tongue for the party. Yes, all the Americans were talking about it and I thought why not?! So I went over to get some, he had prepared it in a delicious gravy, went back to my table and one of the Americans asked if I knew what I was eating, I said yes, “cow tongue” and he says, “and you like it?” I said what is there not to like? Instead of you telling everyone about it and turning them off from it before they try it, why don’t you go and eat some yourself? He didn’t say another word about it after that.
I loved it, it would melt in your mouth, it was so good.

I would like to try this recipe but the ox tongue I have still has the exterior ‘coat’on it, should I cook it without the sauce first? Please advice.

Yes, cook it with just water for 20-minute to remove the exterior coating.
You can cook it with the skin on. Remove once cooked place on a platter and allow to cool slightly so you don’t burn your fingers. Make a few cuts with a knife across the top and peel all the skin off . If cooked properly it comes off easily.
